This is a super easy soup to make. Originally I used the Weight Watchers soup, but I have made some tweaks to it, but it’s still only 0 you know whats!
Ingredients
- 3 cups broth (vegetable, chicken or beef)
- 2 tsp minced garlic
- 1 cup sliced carrots
- 2 cups green cabbage
- 1 cup green beans
- 1/2 cup kidney beans (if canned, drained and rinsed)
- 1/2 cup zucchini diced
- 2 TBSP tomato paste
- 1/2 red or orange bell pepper sliced or diced
- 2 tsp oregano
- 2 tsp basil
- 1 tsp salt
- Dash of black pepper
- Tobasco sauce optional)
Instructions
- Coat pot with olive oil cooking spray
- Saute garlic and carrots on medium heat for 5 minutes until carrots become soft
- Add broth, cabbage, green beans, peppers, kidney beans, basil, oregano, tomato paste, salt and pepper into pot. Bring to a boil
- After soup begins to boil, reduce heat and let simmer while covered for 20 -25 minutes.
- Add zucchini and continue to simmer for 5 minutes.
- If you want a little kick, add some hot sauce
- This makes 4 servings (1 cup)
- I usually double this recipe so that I have some to freeze. Makes for a quick warm up and serve meal.
