Ingredients
  • Lettuce
  • 4 tortilla chips
  • light sour cream
  • 1 can (drained and rinsed) or 2 cups homemade black beans
  • brown rice
  • salsa
  • avocado
  • organic shredded Mexican cheese
Instructions
  1. Place the tortilla chips in a bowl, then pile on the lettuce, 1/2 cup brown rice, 1/2 cup black beans, 1/4 cup cheese, 1/4 avocado, 1 TBSP sour cream, 2 TBSP salsa
  2. This is a very filling, yummy, and quick meal.
