Ingredients
- Lettuce
- 4 tortilla chips
- light sour cream
- 1 can (drained and rinsed) or 2 cups homemade black beans
- brown rice
- salsa
- avocado
- organic shredded Mexican cheese
Instructions
- Place the tortilla chips in a bowl, then pile on the lettuce, 1/2 cup brown rice, 1/2 cup black beans, 1/4 cup cheese, 1/4 avocado, 1 TBSP sour cream, 2 TBSP salsa
- This is a very filling, yummy, and quick meal.
